The length of time a ship or fishing boat can remain at sea is dependent on how long fish can be stored on the ship as the longer the fish remain frozen, the lower the quality of the project when it reaches the end user. Fish products such as haddock and cod which are native of the North Atlantic have a storage time of up to 15 days before they deteriorate rapidly. Tropical fish have a longer frozen life and can remain edible for longer periods of time. There are of course exceptions to this and all fish freezing operations should be treated with local discretion.

The time limit for storage in ice means that fishing ships must dock at their home port without the ship being full to capacity. This is very inefficient in terms of fuelling ships and running costs showing that there is need to extended preservation that increase the storage capacity without changing the nature of the raw fish products. Quick freezing, shock freezing or blast freezing is a popular way of doing this.

Fish need to be frozen or stored at very low temperatures in on-board fish freezers as soon as they are caught. If this occurs there is no limit on the length of voyage of the ships which now do not have to dock before they reach full capacity giving an all-round efficient operation. On board fish cold storage allows the whole fish proccess to be more economical.

Fish can also be distributed to a more diversified market without the use of a cold chain. The quality of fish that are frozen at sea are actually very good quality so the condition of the fish is not compromised.
